What do you guys think is better for off-roading? Carburetors or fuel injection?

fuel injection... you can get yourself into off camber situations wothout worrying about starving you engine.

Even the best carbs will starve going uphill, downhill, side hill, and worst of all whoops. Obviously some are worse than others.

But it depends on what you are doing with it. If your a mud racer then a carb will be just fine. If your a hill climber or racer, FI is the only way to go.
